Breakfast at the hotel. Morning, overland to Ha Long Bay. Arrive in Ha Long City.

Must-try dishes in Halong:

1. Sipunculus

Sipunculus is a kind of sand worm, a kind of seafood that only exists in Halong.The worm lives in the sea, just under the top layer of sand, and only lives in clean water. Fresh sipunculus fried with garlic spikes make a delicious dish. You can dry sipunculus into dark brown then grilled or roasted it to use with a cold cup of beer or spices for noodle broth.

 

2. Horseshoe crab

Another attractive specialty of Halong is horseshoe crab, an arthropod crustacean. From this, people can process a lot of delicious and unusual dishes such as: blood pudding, salad, sweet and sour fried legs, sauteed with lemon grass, fried horseshoe crab’s eggs, steamed, baked cartilage, fried with vermicelli and so on.

 

3. Nodding Cake

This traditional Vietnamese cake is made from rice flour. Cold rice is added to the dough, so that the cake is coated with a fluffy but smooth texture. The cake is then steamed into a thick layer, which is then rolled without filling and sliced into pieces. It is usually dipped in a special sauce and served with a piece of caramelized pork. The cake originated in the town of Tien Yen, but is popular in Halong.

 

4. Ca say Tien Yen

“Ca say” is the hybrid of duck and cairina, through processing of Tien Yen people, the flavor becomes doublly delicious. Tien Yen people process “cà sáy” and make its specialized sauce which has the fragnant flavor of Cai Rong, Van Yen, Cat Hai fish sauce, the sweetness of Quang Tay “xá xị” and the mild pungency of  Tien Yen ginger grown on home soil.

 

5. Ngan

"Ngan” is a bivalve mollusk such as clams, can be processed in various ways: grilled, steamed, made soup, fried with noodles or vegetables. “Ngan” also can be used to make wine which owns sea scented.

Halong- Hanoi

Breakfast at the hotel. Morning, boat cruise to visit Thien Cung (Celestial Palace) and Dau Go Grottos... Lunch on board. Afternoon overland back to Ha Noi. Arrive Hanoi, visit Hoan Kiem Lake .

Dinner enjoy PHO-- The classic Vietnamese signature dish is probably one of the best foods Hanoi has to offer, this dish consists of the aromatic soup, filled with slices of beef, rice noodles and a plateful of fresh herbs.

Must-try dishes in Hanoi:

1. Bun cha

Bun Cha was the dish that president Obama fell in love with when he first came to Hanoi. Understandably so as this is one of the most flavorful and outstanding dishes of Vietnamese cuisine. Bun Cha consists of grilled pork strips and balls or chả served over a bed of steaming rice vermicelli noodles or bún. The vermicelli noodles served on the side are thin, soft and slightly chewy.

2. Bun oc- snail vermicelli soup

Bun oc (snail vermicelli soup) is an iconic dish of Hanoi which any visitor to the capital city should try. The clear, sweet and lightly sour broth mixed with the great greasy taste and crunchiness of the snails creates a perfect harmony for the dish. To make a proper bowl of bun oc with the right flavor, a cook must choose good snails and seasoning for the broth, as well as fresh vermicelli.

3.Banh mi

While its origins are French, the Vietnamese have made it distinctively their own. Generally speaking it is an airy Vietnamese baguette made with a combination of wheat and rice flours with a thin crispy crust. It is stuffed with pork, pâté, cured ham, a mélange of Vietnamese herbs and vegetables like coriander, cucumber, carrot, slices, radish and more depending on what part of the country you are in. A wealth of textures and flavors, you will savor spicy, salty, savory, sweet, and aromatic tastes in each bite.

 

4. Che- Vietnamese Sweet Soup

Che in Vietnamese, literally means desserts. It is the word for traditional Vietnamese desserts and also Vietnamese sweet soups. Che sweet soups are typically made of several ingredients mixed together and served in a large glass. In Hanoi, you’ll find che vendors on the street. When it is cooler, delight in a warm bowl of chè deserts. When it’s hot, you will appreciate crushed ice added to your che dessert.

 

5. Egg Coffee

Although it is not technically a food specialty, but egg coffee  is a Hanoi specialty coffee.  It is a thick dark coffee topped with egg yolk whipped with condensed milk into an airy froth. Rich in taste, it can be likened to tiramisu dessert.
